
So I started an herb garden in my backyard and have been on a mission to use my fresh herbs as much as possible. I went to check on it tonight and noticed my dill got flattened in the crazy wind we have been having. Of course, I had to save some! I was trying to figure out how to best use it with my dinner plans, and this turned out to be the perfect combination of flavors!
Ingredients:
- Filet of fresh salmon (I get 1.5 lbs from the grocery and it makes ~4 servings)
- 2 stems of fresh dill, chopped (I cut mine with herb scissors)
- 2 cloves garlic, minced
- Juice of 1 lemon
- Flaky sea salt, probably around a tsp
- Pepper to taste
- Drizzle of honey
Instructions:
- Preheat oven to 400° F
- Score salmon on top into squares so the seasoning gets all up in there.
- Mix together all ingredients, except honey
- Pour over top of salmon, spreading evenly
- Drizzle honey over top of salmon filet
- Bake at 400 for 20 minutes or until internal temp is 140° F (I take it out at this point because it will cont cooking on the counter. This allows it to get to apetece 145°)
- Enjoy!
