
These are, in fact, as delicious as they look. I love rosemary potatoes, but never thought to try rosemary on my sweet potatoes. Thank goodness I did because wow – amazing. This is just a spin on my usual, go-to, roasted sweet potato cubes. They’re super simple and the perfect side for any main!

Ingredients:
- 1 large sweet potato, peeled and chopped into half inch cubes
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp flaky sea salt
- pepper to tast
- 3 stems of fresh rosemary, chopped
Instructions:
- Preheat oven to 400° F
- Toss sweet potato cubes in olive oil.
- Sprinkle seasonings over top and toss, coating evenly.
- Roast for 20-25 minute, until sweet potatoes are tender.
- Serve with any entree!
