Roasted Rosemary Sweet Potato Cubes

These are, in fact, as delicious as they look. I love rosemary potatoes, but never thought to try rosemary on my sweet potatoes. Thank goodness I did because wow – amazing. This is just a spin on my usual, go-to, roasted sweet potato cubes. They’re super simple and the perfect side for any main!

Ingredients:

  • 1 large sweet potato, peeled and chopped into half inch cubes
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp flaky sea salt
  • pepper to tast
  • 3 stems of fresh rosemary, chopped

Instructions:

  1. Preheat oven to 400° F
  2. Toss sweet potato cubes in olive oil.
  3. Sprinkle seasonings over top and toss, coating evenly.
  4. Roast for 20-25 minute, until sweet potatoes are tender.
  5. Serve with any entree!
