
This meal was actually exciting to eat. I completely winged it on the recipe, but it will be a regular on our rotation for sure!
Ingredients (serves 3)
For the Salmon
- 1.25 lbs fresh salmon
- 1 tbsp olive oil
- 2 tbsp honey
- 2 tbsp sriracha
- 1 tsp salt
- 1/2 tsp pepper
- 1 tsp garlic powder
For the Brussels sprouts
- 1 lb Brussels, shredded or finely sliced
- 1 tbsp olive oil
- 1 tsp salt
- 1/2 tsp pepper
- 1 tsp garlic powder
- 1/2 tbsp honey
- 1/2 tbsp sriracha
Instructions:
- Preheat oven to 425° F. Prepare 2 baking sheets with parchment paper
- Slice salmon into even filets if not already done.
- Combine honey, sriracha, olive oil, salt, pepper, garlic in a bowl.
- Either toss the salmon in it or baste the mixture onto the salmon. Let it marinate while you prep the Brussels.
- Toss sliced Brussels in olive oil, salt, pepper, and garlic. Place on a lined baking sheet and into the oven for 15 minutes.
- Place salmon on the other lined baking sheet and place into the oven for 15 minutes.
- Remove salmon once it reaches 145° F internal
- Remove the Brussels and toss in hot honey and sriracha.
- Return Brussels to oven and broil for 5 min. Watch closely so they don’t burn.
- Plate Brussels and top with salmon. Enjoy!
