
I went to visit my family over the weekend, and my mom made this recipe one night. It’s delicious, and pretty simple, so I couldn’t wait to share with everyone. You can prepare ahead by chopping your onion and sausage. You can also use canned corn. Just don’t forget to soften your cream cheese! I hope you enjoy this recipe if you try it.
Ingredients:
- 3 tbsp butter, unsalted
- 1 bag frozen corn, cooked
- 1 cup onion, diced
- 4 oz cream cheese, softened
- 1/2 cup half-and-half
- 1 tsp black pepper
- 2 tsp salt, divided
- 2 tbsp green onion, chopped
- 1 tsp olive oil
- 8 oz smoked or andouille sausage, cut unto 1/4 inch slices
- 1 lb medium shrimp, peeled and deveined
Instructions:
- In a large skillet over medium heat, melt butter. Add onion and cook until tender. Add cooked corn (either from microwave bag or canned corn would also work).
- Add half the salt, the pepper, half and half, and cream cheese, cooking until cream cheese melts.
- Stir in green onion.
- Cover and set aside
- In a separate skillet over medium-high heat, add olive oil and cook sausage until browned. Set on a paper towel lined plate to drain.
- In the same skillet, add shrimp and season with salt. Cook until shrimp is pink, stirring occasionally ~3 minutes.
- Serve corn topped with sausage and shrimp. Top with green onion.
