Shrimp & Sausage Corn Skillet

I went to visit my family over the weekend, and my mom made this recipe one night. It’s delicious, and pretty simple, so I couldn’t wait to share with everyone. You can prepare ahead by chopping your onion and sausage. You can also use canned corn. Just don’t forget to soften your cream cheese! I hope you enjoy this recipe if you try it.

Ingredients:

  • 3 tbsp butter, unsalted
  • 1 bag frozen corn, cooked
  • 1 cup onion, diced
  • 4 oz cream cheese, softened
  • 1/2 cup half-and-half
  • 1 tsp black pepper
  • 2 tsp salt, divided
  • 2 tbsp green onion, chopped
  • 1 tsp olive oil
  • 8 oz smoked or andouille sausage, cut unto 1/4 inch slices
  • 1 lb medium shrimp, peeled and deveined

Instructions:

  1. In a large skillet over medium heat, melt butter. Add onion and cook until tender. Add cooked corn (either from microwave bag or canned corn would also work).
  2. Add half the salt, the pepper, half and half, and cream cheese, cooking until cream cheese melts.
  3. Stir in green onion.
  4. Cover and set aside
  5. In a separate skillet over medium-high heat, add olive oil and cook sausage until browned. Set on a paper towel lined plate to drain.
  6. In the same skillet, add shrimp and season with salt. Cook until shrimp is pink, stirring occasionally ~3 minutes.
  7. Serve corn topped with sausage and shrimp. Top with green onion.
