Steven and I have a habit of craving Asian on Sunday nights. Don’t ask me why, but we somehow always manage to get takeout from some local Asian spot. Don’t get me wrong, I’m rarely let down by takeout, but I’ve also started to try recreating restaurant items at home for a slightly healthier option – or at least one in which i’m fully aware of what’s inside! I’ve never actually had Lemon Chicken at a restaurant, but this turned out pretty good!
What you need:
- 1/4 cup brown sugar, packed
- 1/4 cup lemon juice
- 1/3 cup soy sauce
- 1/4 cup honey
- 1 tsp salt
- 1/2 tsp garlic
- 1/2 tsp ginger
- 2 tbsp olive oil
- 2 tbsp apple cider vinegar
- Breaded chicken – see how I make it here
- Cooked rice
- Cooked veggie of choice, I used broccoli
- Chopped green onions
What to do:
- Combine ingredients 1-9 in a small saucepan over medium heat. Bring to boil. Turn off heat and allow to cool for about 10 minutes so it can thicken. If you don’t notice it thickening up, add a cornstarch and water mixture. (Instructions should be on your cornstarch canister).
- Place your chicken and veggies in a bowl of rice. Drizzle sauce over top, and sprinkle with green onion.
