Sheet Pan Shrimp Fajita Tacos

what you need:
  • 1 lb shrimp, fresh or frozen
  • 1 yellow onion, diced
  • 2 bell peppers, diced or sliced
  • 1 tbsp olive oil
  • 2 tbsp taco seasoning
  • 1 tsp lime juice
  • tortillas of your choice
  • avocado, hot sauce, and cheese of choice for topping

what to do:

  • preheat oven to 450 degrees
  • thaw shrimp if frozen by running cold water over them
  • toss together shrimp, diced peppers, diced onions, olive oil, lime juice, and taco seasoning
    • if you don’t want to make the whole taco seasoning recipe, for this recipe combine: 1/2 tsp paprika, 1/2 tsp garlic powder, 1/2 tsp onion powder, 1/2 tsp cumin, 2 tsp chili powder, 1 tsp salt, pepper to taste
  • layer evenly on a foil lined baking sheet
  • bake for 10 minutes, then broil for 2 minutes (watch closely, so they don’t burn!)
  • layer the shrimp and peppers onto a soft tortilla, top with your favorite toppings, and enjoy!
