Poppyseed Chicken Casserole

what you need:

  • 1 box (8 oz) noodles, cooked (Banza is great for higher protein; otherwise I recommend egg noodles)
    • could also use 2 cups of cooked rice in place of pasta
  • 5 cups of cooked chicken (I have used rotisserie and canned chicken, but you could also cook and shred chicken breasts yourself!)
  • 16oz sour cream or plain Greek yogurt ⁣(extra protein if you use greek yogurt, extra delicious if you use sour cream!)
  • 2 cans cream of chicken soup ⁣
  • 2 tubes Ritz crackers, crushed
  • 4 tbsp butter, melted
  • 1 tbsp poppyseeds⁣

what to do:

  1. Preheat oven to 375° F
  2. Cook your pasta as instructed on the back of the box
  3. While pasta is cooking, crush 2 tubes of Ritz crackers and mix them with melted butter
  4. Mix cooked pasta, cream of chicken soup, sour cream, and chicken together
  5. Place into a prepared (just spray some cooking oil in there) 9×13 inch pan and top with Ritz mixture and poppyseeds
  6. Bake for 30 minutes, or until golden and bubbly
  7. ENJOY with your favorite veggies
