
what you need:
- 1 box (8 oz) noodles, cooked (Banza is great for higher protein; otherwise I recommend egg noodles)
- could also use 2 cups of cooked rice in place of pasta
- 5 cups of cooked chicken (I have used rotisserie and canned chicken, but you could also cook and shred chicken breasts yourself!)
- 16oz sour cream or plain Greek yogurt (extra protein if you use greek yogurt, extra delicious if you use sour cream!)
- 2 cans cream of chicken soup
- 2 tubes Ritz crackers, crushed
- 4 tbsp butter, melted
- 1 tbsp poppyseeds
what to do:
- Preheat oven to 375° F
- Cook your pasta as instructed on the back of the box
- While pasta is cooking, crush 2 tubes of Ritz crackers and mix them with melted butter
- Mix cooked pasta, cream of chicken soup, sour cream, and chicken together
- Place into a prepared (just spray some cooking oil in there) 9×13 inch pan and top with Ritz mixture and poppyseeds
- Bake for 30 minutes, or until golden and bubbly
- ENJOY with your favorite veggies
