
what you need:
- 1 package rice noodles
- 3 cups cooked chicken (I used rotisserie)
- 1 egg
- 1/2 onion, diced
- 3 tbsp fish sauce
- 1 tbsp soy sauce
- 3 tbsp brown sugar
- 2 tbsp rice vinegar
- 1 tbsp sriracha
- 1 tbsp creamy peanut butter, optional
what to do:
- Bring a medium pot of water to a boil
- Upon boiling, remove from heat and add noodles. Let sit for 8 minutes until tender.
- While noodles are cooking, heat olive oil in a skillet and add diced onions and minced garlic. Cook until onions are translucent. Push to one side of pan
- Add an egg to empty side of pan and scramble.
- To make sauce, combine fish sauce, brown sugar, soy sauce, rice vinegar, sriracha, peanut butter in a bowl.
- Add in cooked chicken, cooked noodles, and sauce to pan with onions and egg. Stir to combine and heat over low for 2 minutes to allow the sauce to cook into the noodles.
