Chicken Pad Thai

what you need:

  • 1 package rice noodles
  • 3 cups cooked chicken (I used rotisserie)
  • 1 egg
  • 1/2 onion, diced
  • 3 tbsp fish sauce
  • 1 tbsp soy sauce
  • 3 tbsp brown sugar
  • 2 tbsp rice vinegar
  • 1 tbsp sriracha
  • 1 tbsp creamy peanut butter, optional

what to do:

  1. Bring a medium pot of water to a boil
  2. Upon boiling, remove from heat and add noodles. Let sit for 8 minutes until tender.
  3. While noodles are cooking, heat olive oil in a skillet and add diced onions and minced garlic. Cook until onions are translucent. Push to one side of pan
  4. Add an egg to empty side of pan and scramble.
  5. To make sauce, combine fish sauce, brown sugar, soy sauce, rice vinegar, sriracha, peanut butter in a bowl.
  6. Add in cooked chicken, cooked noodles, and sauce to pan with onions and egg. Stir to combine and heat over low for 2 minutes to allow the sauce to cook into the noodles.
