Cheddar Grits

I used to hate grits. Literally, despise. And honestly, I don’t even know why because once I got them at the best breakfast restaurant in Memphis during PT school, I’ve loved them. There’s a restaurant here in Austin that makes rainbow trout and grits, so last week I tried to recreate them. I’d like to preface this with the fact that this recipe was also made during my broken oven and stovetop era, so this is a microwave recipe. Truly a breeze, and so delicious.

What you need:

  • 1/2 cup quick (5 minute) grits
  • 3/4 cup water
  • 1/2 cup heavy cream
  • 1/2 cup shredded sharp cheddar
  • salt and pepper to taste

What to do:

  1. Combine grits, water, and heavy cream in glass, microwave safe bowl.
  2. Microwave for 2 minutes, stir, and microwave for 2 more minutes.
  3. Add cheese, salt, and pepper. Stir. Depending on consistency at this point, you can microwave for 1 more minute, or you can stop here.
  4. Serve with fish, shrimp, or have for breakfast. Enjoy!
