I used to hate grits. Literally, despise. And honestly, I don’t even know why because once I got them at the best breakfast restaurant in Memphis during PT school, I’ve loved them. There’s a restaurant here in Austin that makes rainbow trout and grits, so last week I tried to recreate them. I’d like to preface this with the fact that this recipe was also made during my broken oven and stovetop era, so this is a microwave recipe. Truly a breeze, and so delicious.
What you need:
- 1/2 cup quick (5 minute) grits
- 3/4 cup water
- 1/2 cup heavy cream
- 1/2 cup shredded sharp cheddar
- salt and pepper to taste
What to do:
- Combine grits, water, and heavy cream in glass, microwave safe bowl.
- Microwave for 2 minutes, stir, and microwave for 2 more minutes.
- Add cheese, salt, and pepper. Stir. Depending on consistency at this point, you can microwave for 1 more minute, or you can stop here.
- Serve with fish, shrimp, or have for breakfast. Enjoy!
