Rotel Chicken Spaghetti

My mom made this all the time growing up, and it was so yummy. I had completely forgotten about it until I asked my best friend what her favorite food ever was, and this was her answer! Its super easy and could be made with rotisserie chicken for even less prep.

What you need:

  • 1.5 lb cooked chicken
  • 1 lb cooked spaghetti (I use Banza for extra protein)
  • 12 oz velveeta cheese
  • 1 can rotel (diced tomatoes and green chilis)
  • 1 can cream of mushroom soup

What to do:

  1. Cook chicken. I put my chicken in the instant pot for 6 minutes with 1 cup water and salt and pepper. To shred, I place it in the stand mixer (I love my Kitchen aid!)
  2. Cook pasta as instructed on box.
  3. Preheat oven to 350° F.
  4. Combine cooked chicken, cooked pasta, Velveeta, Rotel, and cream of mushroom soup and place in a prepared baking dish. Cook until heated through and cheese is melted and bubbly.
  5. Enjoy!
