Air Fryer Mexican Street Corn on the Cob

When I think of summer, I think of corn on the cob. I love when it’s grilled, but sometimes this Texas heat is too much to get us to fire up the grill. We tried it in the air fryer for the 4th of July and it was just as good!

What you need:

  • Corn on the cob
  • Butter
  • Cheese that crumbles (I used queso fresco but a lot of street corn recipes use Cojita cheese)
  • Sour cream or mayo
  • Lime juice
  • Chili powder
  • Paprika
  • Salt

What to do:

  1. Brush corn with melted butter. Place in air fryer and cook for 10 minutes, turning occasionally to cook evenly.
  2. Brush cooked corn with mayonnaise or sour cream and a squeeze of lime juice
  3. Roll in crumbled cheese. Sprinkle with chili powder, paprika, and salt.
  4. Enjoy!
