Shrimp Fried Rice

You can use this recipe for any fried rice and add in your protein of choice! Shrimp is easy because we keep it in the freezer and it quickly thaw out, but I have also done it with rotisserie chicken.

What you need:

  • 2 cups cooked rice (I store mine in the fridge for a few hours or overnight)
  • 1 lb shrimp (or protein of choice), cooked and chopped into small pieces (I cook in soy sauce with garlic and ginger)
  • 1/2 medium onion, diced
  • veggies of choice (I usually use frozen peas and carrots)
  • 2 eggs
  • 1 tbsp toasted sesame oil
  • 1 tbsp rice vinegar
  • 3 tbsp soy sauce or coconut aminos

What to do:

  1. Over medium heat, sauté onion in olive oil until translucent. Add in frozen or fresh veggies and cook until tender
  2. Move veggies aside and crack 1-2 eggs into greased pan, cooking until scrambled.
  3. Add in cold rice, cooked shrimp, and mix well.
  4. Pour in rice vinegar, soy sauce, and toasted sesame oil. Mix well and season with salt to your liking. Cook until all ingredients are heated through.
  5. Enjoy!
