There’s not much to say about these other than they are addicting and delicious. My mom used to make these all the time and over the years, I have implemented them more and more into our weekly dinner menu. We went for a few months without having them, and last week I made them again. Steven looked at me and said, “why did we stop making these?!” They’re just so good. And aside from cubing the potatoes, they are a breeze. You can also make them in the oven if you don’t have an air fryer!
What you need:
- 2 small sweet potatoes, cubed
- 2 tablespoons olive oil
- 2 teaspoons brown sugar
- 1 tsp paprika
- 1 tsp cinnamon
- 1 tsp coarse sea salt
What to do:
- Peel and cube sweet potatoes. Aim for consistent, 1 inch cubes
- Combine remaining ingredients, tossing evenly to coat sweet potatoes
- Air fry for 15-17 minutes, tossing halfway. If you chose to use the oven, roast at 425° F for 20 minutes or until tender and crispy.
- Enjoy!
