Air Fryer Sweet Potato Cubes

There’s not much to say about these other than they are addicting and delicious. My mom used to make these all the time and over the years, I have implemented them more and more into our weekly dinner menu. We went for a few months without having them, and last week I made them again. Steven looked at me and said, “why did we stop making these?!” They’re just so good. And aside from cubing the potatoes, they are a breeze. You can also make them in the oven if you don’t have an air fryer!

What you need:

  • 2 small sweet potatoes, cubed
  • 2 tablespoons olive oil
  • 2 teaspoons brown sugar
  • 1 tsp paprika
  • 1 tsp cinnamon
  • 1 tsp coarse sea salt

What to do:

  1. Peel and cube sweet potatoes. Aim for consistent, 1 inch cubes
  2. Combine remaining ingredients, tossing evenly to coat sweet potatoes
  3. Air fry for 15-17 minutes, tossing halfway. If you chose to use the oven, roast at 425° F for 20 minutes or until tender and crispy.
