Sheet Pan Chicken Quesadillas

I love a good quesadilla. I’ve been known to order them at Mexican restaurants on occasion, and I have no shame. This recipe is so easy! It would be great for hosting or for busy mamas with lots of hungry kiddos. Let me know if you try this!

What you need:

  • 8 medium tortillas
  • 1 cup shredded cooked chicken
  • 1/2 cup shredded Mexican cheese
  • 1/4 cup corn
  • 1/3 cup black beans
  • 2 tablespoons taco seasoning
  • Optional toppings: shredded lettuce, guacamole, salsa, sour cream

What to do:

  1. Around the edges of a 9×13″ pan, place 6 tortillas, overlapping slightly on the pan. There will be an opening in the middle. Place a 7th tortilla in the open spot in the middle.
  2. Mix together chicken, cheese, taco seasoning, corn, and black beans. spread evenly over the tortillas.
  3. Place 8th tortilla on top in the middle. Fold over 6 initial tortillas and place a second baking sheet on top to keep in place.
  4. Bake at 375° F for 15 minutes. Remove top sheet pan, bake for 5 minutes more. Broil on high for 2 minutes.
  5. Cut with a pizza cutter or steel chopper. Dress with toppings, and enjoy!
