So for anyone on here who knows me personally, you know two things: I start a new job this week, and I’m not a morning person. However, I’m someone who really needs food in the morning or else I’m getting a headache by 9am. SO, I’m always trying to come up with breakfast ideas that are easy to prep but still good. We can all be honest that meal prep food is typically gross by day 3 or 4.
So this week I’ve decided to try some breakfast burritos. This recipe made 21 burritos and I wrapped them each individually in parchment paper before freezing them in a gallon freezer bag. Just take them out of the freezer the day before you plan to eat them and put them in the fridge. I microwaved for about 40 seconds and they were perfect! I had one with some yogurt and Steven had 2 (for serving reference).
Also this is a great recipe to get creative with. You hate sausage? Use bacon. Vegetarian? Add some chopped onions and peppers in place of meat. Just a plain Jane? Egg and cheese is fine! Let me know what add-ins you come up with if you try it!
What you need:
- 18 eggs
- 2 lbs sausage or bacon
- 1 cup shredded cheese of choice
- 1/3 cup salsa of choice
- 20 medium tortillas, I used carb balance
What to do:
- Heat a large skillet over medium heat. Add your sausage. Brown and crumble.
- While sausage is cooking, crack your eggs into a large bowl and whisk until smooth.
- Once sausage is browned, add eggs to the same skillet. You’ll have to keep stirring for the duration to cook the eggs through and prevent burning (unless your pan is just giant).
- Once eggs are cooked, add in cheese and salsa and mix.
- Scoop 1/2 cup of egg mixture into tortillas and roll.
- If you’re meal prepping: Wrap in parchment paper and allow to cool before placing in a freezer bag and into the freezer.
- Remove the number of burritos you plan to eat one day prior to eating. Place in fridge to thaw. Microwave for 45 seconds or heat in a skillet for a crispier tortilla.
